Farmer’s Market: Summer Tomato Sauce

Quick & Easy
Farmer’s Market: Summer Tomato Sauce

Ingredients

  • Mixed chopped Seasonal local fresh Tomatoes - mix and match - you want 2-3 lbs
  • 1 Shallot minced
  • 3 Crushed fresh Garlic cloves.
  • 1 ½ cup Olive Oil
  • 1 Tsp Red Pepper flakes
  • Salt & Pepper
  • 14 cup Fresh chopped Oregano
  • 1 cup Fresh chiffonade Basil
  • Optional: 2 Tbsp unsalted Butter - to finish for a thicker sauce.

Procedure

Blister tomatoes: First get a hot pan - no oil, just crank up the heat high.
Toss in fresh tomatoes and let them cook, leave them be for 6-7 minutes. You might think they are popping, burning, screaming, sizzling… it’s perfect - let them work.
When you think you’ve gone too far, sprinkle 1 Tsp salt. Quick stir. Leave be. This will pull out water, and start to stew the tomatoes after the skin has blistered and roasted nicely.
After water seeps (about 1 minute) lower heat to Medium. Add shallots & garlic, stir. Cook 2 minutes.
Add Oregano, Chili flakes, stir sauce well before pouring in Olive Oil. Stir while cooking another 5 minutes, then turn off heat.
*Make sure not to burn olive oil - if you start to boil or go beyond a gentle simmer, turn off heat.

Add fresh Basil, salt and pepper to taste. Let sit off heat for 5-10 minutes - This will thicken. Stir and serve.
*If adding butter to make richer and thicker, stir in now.

Enjoy! Quick, Seasonal, Fresh, Hot weather appropriate - Tomato Sauce!

DIY ASIAN! Sesame Salmon over Noodles & Dashi w/ Edamame

#TimeCrunch

DIY ASIAN!!!

Sesame Salmon over Noodles & Dashi with Edamame

If Asian cuisine intimidates you… Not any more! This has bright and vibrant flavors in every bite! You will make your own Dashi from your pantry items! You will use frozen Edamame, Grill your own Salmon, and use Top Romain - Yes Top Romain (ditch the salt pack) for your noodles! Quick, Simple, Easy… Look Like a Pro and impress! You can make a gorgeous Gourmet meal in 30 minutes or less! #TimeCrunch
This is the perfect dish for the occasional or weekend cooks, those that want to start learning new types of food, it’s really quite a lovely and refreshing dish… Oh best part- it can be served Hot or Cold!
Ramen noodles are excellent! I use them constantly! They’re fantastic in a pinch because they’re amazing at absorbing the flavors around them, making them blend and most universal. I love them when I’m doing my #TimeCrunch Series especially for that reason, as well as how fast and durable they are. For example in my Chicken Piccata or really anything with a noodle that you want distinct texture for.
Time: 30 min total /max Difficulty:  EASY
Ingredients:
  • Salmon Fillet - deboned, with/without Skin. (4-6 oz per serving.)
  • 1 pack Top Ramen noodle= 3-4 servings. (discard salt package)
  • 1 bag Frozen Peeled Edamame / Soy Beans - about ¼ cup per serving or more
  • Toasted Sesame oil - for searing
  • Sesame Seeds - garnish / optional
  • Scallions - garnish / optional
Glaze:
  • Any Sesame vinaigrette or marinade in the Salad dressings isle!
    • Make your own Sure: 1 pot heat: ⅓ cup Toasted Sesame oil, 2 tbsp honey, 1 Tbsp soy sauce,  pinch crushed garlic, pinch red pepper flakes. Simmer set aside to let firm.
Dashi: ¼ Cup per servings -shown above. It’s very rich broth, to compliment, this is not a soup.
  • 2 Cups Chicken Broth/ Stock
  • 2 Tbsp Mirin - or Sweet Vermouth, Sweet white cooking wine
  • ¼ Cup Rice Vinegar ( or cider vinegar)
  • ½ clove crushed garlic
  • 1 Sprig Thyme
  • 2 Tbsp sliced Scallions or  chives
  • Pinch Red Chili Flakes
  • 1 tsp Salt - to taste
  • White pepper to taste
      • OPTIONAL: chop up portabello or shitaki mushrooms realy small, add same time. Adds more rich dimension.
Procedure
DASHI:  put all in a pot - boil, turn to a simmer until reduced by ½.  - Set aside or chill if using as a cold plate. *If the Dashi is a little too strong for your taste, add a few Tbsp of warm water until desired flavor.
NOODLE:
Pull off at al dente. Drain and set aside. If you cooked it all the way - run cold water over it until it's cold to stop the noodles from over cooking.
EDAMAME: Save yourself a step! Keep that boiling water from the noodles. Flash those peeled Soybeans in the steaming water about 4 minutes until bite is pleasant to the tooth, drain -set aside.  _OR_ you can pop it in the microwave if you have one of the Steam in Bag kinds, like these from Target.

SALMON: Sesame Oil on pan - Med-High til near smoking. Dab a little marinade on flesh side. Place in pan Skin Side down.
Wait and don’t fuss with it or will loose the skin and make a Damned Mess! 4-5 Minutes, until it easily slides around, and skin is slightly crispy. Pressing in the middle will keep skin on full length as well as cook as the skin starts to seize.
3-4 more minutes, pending on thickness. You want to still be slightly bouncy, though a paler shade of pink rather than bright orange in the center - You will be cutting these so if you’re not sure, go ahead and slice it open now to check it out.
Take out of pan immediately when finished as to not over cook. Place in marinade with skin side up.
Now if you’re going to remove skin, you can pull it off now… for those of us who know that’s the best part… leave it be. Cut in half if need be or to appropriate size.
PLATING 123..4
  1. Noodle - Super easy because they stay together so just grab it by hand and drop it in the center.
  2. Edamame - Again arranged by hand.
  3. Spoon Dashi on and around noodles… again it’s light - not a soup, but coat noodles.
  4. Place Salmon on top.
  5. Drizzle glaze on top of salmon.
  6. Any garnish using like the Sesame seeds, chives, parsley…
You’re finished! Asian dish in less that 30 Minutes! An beautiful, healthy, and filling dish!  Enjoy!!!

Coconut & Old Bay Salmon Cakes

served with Lemon Dill Yogurt

Salty, Sweet, & Spicy! Simply Scrumptious!

This is an easy version on the fabulous dish! A hit for any occasion including a cocktail party to fun family dinner. A great way to introduce children into the kitchen and the entertainer’s instant hit! Quick. Easy. Inexpensive.
I served them on a pinch with my favorite Basil, Tomato, Potato Salad (shown above), and left overs for a beautiful Sunday Brunch! Make extra’s and cut your weekend’s cooking in half!
Now Roll up your sleeves and let the kids play with their food!

Prep time: 30 min Cook time: 15 min Servings: 4-6 entree Dif: EASY
Clean Up Time:   Sorry!

Ingredients Crab Cakes:
  • 3 cups canned Salmon - strained
  • 2 Eggs - beaten
  • 2 cups Dried Coconut  - more if you like sweeter
  • 2  cups Panko (plain bread crumbs)
  • ¼ cup Lemon juice
  • ½ cup Mayo
  • 1 tsp Onion Powder
  • 1 Tbsp Dill
  • ⅓  cup Old Bay Seasoning
  • 1 cup Coconut Oil - for frying   * Vegetable oil is just fine
* These do not need any extra salt! Even at the end because you want that coconut to really pull thru.
** If you’re not familiar with Old Bay… it’s fantastic spice blend for seafood, but it’s heavily salty so if you’re looking for more Heat - as these are mild, add plain Cayenne pepper.
Ingredients Garish:
  • 1 cup Plain Yogurt of choice
  • 1 Lemon - Juice & Zest
  • 1 Tbsp Dill
  • Salt to taste

WHAT ELSE YOU’RE GOING TO NEED
Prepare with lots of paper towels around because  this is best done by getting your hands dirty!
Mise en place!  Because you’re going to be with dirty hands most of the time, have all your ingredients measured and set  up for you when you need them.
  • a skillet with the oil -not turned on yet.
  • a large bowl to start mixing everything together
  • a regular sized bowl you’ll have for the breading
  • Fish spatula, or slotted spoon - these work best as to not splash extra grease when flipping!
  • Cookie sheet or plate for the cakes - before, and then layered with paper towels for draining after cakes are fried.
  • Space in refrigerator for the large bowl to chill before shaping.  *Do Not put in Freezer*

WHERE TO NOW…
In the smaller bowl mix the Panko and Coconut together. Put the Oil in the skillet if you haven’t already...  Put everything away as soon as your done with it... trust me, you'll thank me later!
In the Large bowl, mix the Drained Salmon, Lemon juice, & Old Bay Seasoning, let sit for a couple minutes to really absorb the flavor.
Toss in the rest of the ingredients and mix by hand until it’s completed coated. Now pour ½ the crumbs and coconut mixture, gently fold in with hands, then refrigerate for about 10 minutes.
  • If your mixture seems a bit too wet… this is why it’s going into the fridge - it’ll thicken up and be easier to mold.
  • If it’s too dry as in crumbling and not holding together at all… add another egg or tsp of mayo.
  • Try forming a patty and if it’s barely holding together because it’s damp - then you’ve got the right consistency.
While waiting it’s a great time to start on your Garnish ...
You’ll need one more bowl, and a anything but your hand to mix it all together… Voila it’s finished. Toss it in the fridge until ready to serve.

CAKE TIME:
Grab the mixture, sheet tray, and remaining Panko & Coconut mix.
By hand start forming your cakes to a desired shape…
*Too Small they will burn! If you’re making an appetizer size you’re going to need to bake these at 375 for - 7-10 minutes pending on size. * OR you can fry them just the same but think of them a simple flash! I would not recommend this for beginners.
Also you don’t want them too thick or they won’t cook all the way thru.
Drop the cakes in the Panko mix and make sure coated, pressing if you need to make it stick...
Turn oil to Med- High temperature, you’ll be cooking these slower to cook all the way thru and not to burn your coconut!
The non-kid friendly part:

Basically you’re cooking these for 3-4 minutes on each side… You want to make sure they are light brown, then flip over carefully.
The light brown is important because they will continue to cook after you pull them out of the oil, turning them much darker and into that pretty golden color your desiring, as well as keeping the inside relatively moist. (Sorry I know everyone hates that word, but really nothing else works here.)
If you’re doing batches you can most likely use the oil for 2 batches… if more than that you should have 2 pans going or change the oil to finish the rest.
Take the cakes out carefully and let them drain on the paper towels before serving. This is where most people put salt on their fried food… because this is covered in coconut, and the Old Bay throughout… I highly wouldn’t recommend it, but of course try one first and see what you think.
FINALLY....
Plate with whatever you’re serving with! You can put the sauce on the side for people to help themselves, or a dollop on, however you’d like. Again here I made a non-mayo, Tomato and Basil, Red Potato Salad which is great now the weather has changed! I’ll post that shortly so keep a look out!
I hope you enjoy! And in case you have left overs....
There’s an Amazing Brunch in your future!
